Honey Spelt Rolls

I've been wanting to start baking my own bread for awhile, but I've been dragging my feet. It just seemed so intimidating. But yesterday I put my foot down and decided that I would procrastinate no longer. I decided to start with a dinner roll, and because I had some spelt flour, I chose to use it. It was a spectacular success! So, here is the recipe I used:

Ingredients

-5 1/2 cups spelt flour

-2 tsp yeast

-2 tsp sugar

-2 tsp salt

- 1/3 cup honey

-1/3 cup olive oil

-1 1/2 cups warm water

Time estimate: 2 1/2 hours 

Amount: 24 rolls

1. In the bowl of your stand mixer, whisk all dry ingredients together. Slowly stir in honey, followed by oil. Then, add water a bit at a time. Using a dough hook, mix together only until fully incorporated. 

2. Lay out wax paper and sprinkle with a generous amount of flour. Knead the dough until soft. Grease a large bowl. Spin dough until fully coated in oil. Cover with cloth and sit in a warm spot for an hour. (The top of your refrigerator is a good choice.) By that point it should be double its original size.

3. Uncover dough and return it to wax paper covered with flour. Grease two cupcake pans. Divide dough in half, and then split each half again. Each quarter should then be divided into six pieces. Place the dough in the cupcake pan. Cover with a cloth and return to a warm spot for about an hour. (Alternatively, if you don't plan on eating the rolls right away, instead of putting them in a cupcake pan, put them on a baking sheet and freeze them. When you're ready to bake them, allow them to unthaw and then place them in the cupcake pan.)

4. Once again, the dough should have doubled in size. Now, they're ready to bake! Preheat your oven to 350 and cook the rolls for 15 minutes. They should be golden brown. Allow them to cool in the pan for a couple minutes before serving. Enjoy!
