Peanut Butter-Chocolate No-Bake Cookies

There are a million different ways to make No-Bake Cookies. My family has several different ones that they use regularly. I really like this particular recipe though because it's a lot easier than some of the other ones, and it still produces delicious cookies. It's also consistent, whereas some of the other recipes I've tried turn out different every time. Everyone who has tried them seems to agree. I barely had time to photograph them before they were already being eaten. 

Peanut Butter-Chocolate No-Bake Cookies

Ingredients

3 cups uncooked oatmeal

2 cups sugar

1 stick butter

1/2 cup milk

1/2 cup peanut butter (I don't really measure this one carefully, I just used a big spoonful.)

4 tbsp cocoa powder

2 tbsp vanilla

1. Add the butter, sugar, milk and cocoa powder to a large saucepan and put it over medium heat. Stir slowly with a whisk to mix and smooth. Allow this mixture to come to a boil. From the time it begins to bubble, let it boil for one minute. You can set a timer, but I just count to 60 while I watch. Once the minute is up, immediately remove from heat.

2. Add vanilla and peanut butter and stir with whisk until the mixture is uniform. Then add the oatmeal. You'll want to do this quickly so that the mixture doesn't start to set. 

3. Lay out a few sheets of wax paper. Using a spoon or an ice cream scoop (or whatever implement you prefer) spoon the mixture into small mounds on the wax paper. I make mine the size of your average chocolate chip cookies, but really the size is up to you. 

4. Allow these to cool and set up completely before you remove them from the wax paper. This takes 45 minutes to and hour. You could put them in the refrigerator if you needed to speed up the process.
