Quick and Easy Red Velvet Cookies
Happy Valentine's Day! (A little late, oops.)
Unfortunately, this is a little late, but honestly, Red Velvet Cookies are delicious at any time of the year. These are great when you're short on time as they require only a handful of ingredients and they're quick and simple to put together. And who doesn't love red velvet?
Red Velvet Cookies
1 box red velvet cake mix
1 tsp baking powder
1/3 cup oil (canola/vegetable/grapeseed/olive ect.)
1/2 tsp vanilla extract
1 cup chocolate chips (I use semi-sweet, but dark and white would also work)
1. Preheat oven to 350 and grease cookie sheet.
2. In large mixing bowl add cake mix and baking powder. Mix together using a fork. In a separate bowl mix eggs, oil and vanilla.
3. Add the egg mixture to the cake mixture and stir till fully combined. There shouldn't be any powder left. This mixture will be thick. Add the chocolate chips.
4. Spoon the mixture onto the cookie sheet in walnut or tablespoon sized balls. Cook for 8-10 minutes. It's okay if the cookies are soft when you pull them out of the oven. They'll firm up as they cool. If the bottoms of the cookies begin to brown, then they've been in too long.
This recipe makes 18-24 cookies depending on how big you make them. I usually get 24. Enjoy!
