Winter Bread Series: Sunshine Bread
I love this bread. I love it. I call it Sunshine Bread because it's sweet and cheerful and it reminds me of spring. Eating it always makes me feel happy. It's fairly light, it's easy to make and it can serve as breakfast, a snack or dessert. What's not to love?
-8-10 strawberries, chopped
-1 strawberry, thinly sliced (optional topping)
-1/2 cup of crushed pineapple
-1/2 cup vegetable oil
-1 1/2 cups flour (all-purpose)
-1/2 tsp baking soda
-1/2 tsp salt
-1 tsp cinnamon
-1/2 cup chopped pecans
1. Preheat oven to 350 and grease your loaf pan with butter.
2. In a mixer, add strawberry chunks, pineapple, oil and eggs. Mix for about a minute on medium.
3. In a separate bowl, mix flour, cinnamon, salt and baking soda. Slowly add this to the fruit mixture until it is evenly blended. Last, add chopped pecans.
4. Pour the mixture into your pan and top it with your sliced strawberries to make it pretty. Cook for about 45 minutes. Check to see if it's done by inserting a toothpick into the center. If it comes out wet, cook for 5 more minutes and then check again. Repeat until the toothpick comes out clean.
