Simple Pot Roast
Thanksgiving is almost here! Yikes, I'm not ready yet! I've been scrambling all week trying to get ready for all the festivities this week, and I've been relying on my trusty crock pot for all our meals. Luckily, I have a stash of some really good recipes for it. All of them are delicious, and most of them are pretty easy too. One of my favorites is my Simple Pot Roast recipe. Pot Roast was always one of those things that I avoided because it seemed to involved and complicated. However, I came across a friend's recipe. It seemed pretty easy so I decided to try it out. As soon as I tried some, I regretted not having made it sooner.
Simple Pot Roast
2-3 lbs beef roast
2 cups water
1 Hidden Valley Ranch seasoning packet
1 packet brown gravy mix
1 packet Italian dressing seasoning mix
Chopped vegetables (You can add whatever you prefer. I use: 1 green pepper, half a bag baby carrots, half a carton of mushrooms and half an onion)
Mix the water and all three seasoning packets in the crock pot. Mix thoroughly and then add the roast. This mixture might not look or smell super appetizing at first, but about halfway through the cooking process it starts to smell amazing. Cook on low for 4 1/2 hours.
Now you add your vegetables. I try to lift up the roast and pour the vegetables underneath to make sure they cook well. Depending on how big the roast is though, this can be tricky. Cook for 1 1/2 more hours.
That's it! You're ready to eat! I cut it up and serve it over rice, but you could really fix it any way you wanted to. The leftovers are delicious too! It's definitely one of my favorites when I'm busy.
