Pancake Muffins

Breakfast and baked goods are two of my favorite things in the kitchen. Naturally, I'm always looking for intersections between the two. Pancakes, waffles, muffins. I love them all! Unfortunately, pancakes and waffles can be time consuming to make fresh every morning. Muffins, however, have the advantage of shelf life. In the interest of having a quick and easy pancake breakfast every morning, I came up with the pancake muffin! It's the perfect compromise for those mornings where your just in too much of a hurry to cook.

Adventures in Canning: Part 1

I've been a busy bee these past few months! I apologize for the lack of articles recently, but my plate has been pretty full. I have good news though! I have several articles planned for the next week or two, as well as the months to come, and I'm looking forward to producing more content. Thank you for your patience! 

One of the things I've been working on lately is my garden. It's taken off and it's doing great! (Well, except for the cabbage and the broccoli. An army of caterpillars mowed through them. ) In particular, the cucumber vines have been growing prodigiously. Late last week I was cutting fully grown cucumbers off the vines, and by this Tuesday I had enough to make a batch of pickles! I have no prior experiences canning at all, but I've been looking forward to this all summer. Here's how it went:

Peach Cobbler Bites

Summer is finally here! My garden is bursting out of the planter boxes and the first peppers and tomatoes are starting to appear. The weather has turned hot and humid. Some of my summer flowers are starting to bloom. And, the first few, fresh peaches of the season are starting to appear in local markets. That means it's time for peach cobbler! Instead of my usual recipe though, I decided to experiment with a cookie version that would be easier to pack and take in my lunches or as a snack. They've been a hit!

Strawberry Pie Bars

One of my mother's favorite recipes is for miniature cherry pies. Over the years it's also become a fan-favorite and someone requests it at almost every holiday party. It's delicious, but I've recently been experimenting and trying to make a version of my own. I prefer strawberries to cherries, and I also wanted to avoid having to use the miniature pie crusts which are expensive to buy and a pain to make yourself. Honey Spelt Rolls

I've been wanting to start baking my own bread for awhile, but I've been dragging my feet. It just seemed so intimidating.
